Breakfast Cupcakes (I forgot the "original" name!)

Hello friends! Yes, it's been awhile... but the Holidays are over and I have no more excuses not to post! Hope everyone enjoyed their Christmas and New Years! I know I did! :)

Let me just say, I made out like a bandit this Christmas! So thankful for all of my new wonderful cooking "goodies"! Now I really have to "cook"! hahaha  This past weekend, I decided to use one of my new pressies... A Cupcake Pan! Yep, I didn't even own one! So I decided to try one of Martha Stewarts recipes!  Like I said it in the "title", I can't remember her name of this recipe.  If you want her way of doing it, go to her website and look under breakfast recipes!

 Ingredients to make only one:  As my sister said to me; "Andersen, party of one?  Your chair is ready!" hahahahaaa.  If you want to make more, just double or triple or quadruple! Yeah buuuuuddy!

2 pieces of Sourdough. (Any will do for the most part)
Grated Cheese (Optional)
1-2 Slices of Bacon (I used 2... don't judge!)
1 Egg
Melted Butter (just a scoop)
Directions:

Preheat oven to 350*

Cook up some bacon till almost done.  Set aside for later.
 
Get 2 Pieces of Bread (your choice) and a cookie cutter.  In my case, I used a stemless wine glass!  With the glass, push down over bread, creating two circles. If using a thicker bread, flatten it a bit with your palms.   

In your cupcake pan, lay each piece in, half covering one another and the end of the bread just barely popping up.  Coat the edges with butter.  Smoosh bread down, so it's not being a "hole" hog.

Put some cheese in, then grab 1-2 pieces of bacon.  Length wise, lay across and push only the middle down.  You want the bacon hanging over the sides, but middle flattened.  Is everyone following along? Yes, photos I'm sure would help, but I forgot! :)

Crack an egg and put it right onto the bacon!  It will pour over more than likely, but it's fine! Promise!

Let it cook till whites are done! I'm down with the yolkie yolk, so I cooked it for 18 mins.  Enjoy!

Oreo-Cookie Cheesecake

Hello everyone! Sorry, I've been M.I.A. but I've been celebrating my birthday for awhile! hahaa

I don't know why, but I'm so into cheesecake lately! You know, I never used to like cheesecake? I really think it's true... the older you get, the more your taste buds change! And let me tell you, mine are a changin'!

Ingredients:

I can't remember... I kinda just threw this together!  Yep, I'm what one might call, "creative"! Don't hate, get in your kitchen and participate! hahahaha

Sesame Chicken

Hello friends!  Guess what?! I've conquered my first goal... I have 11 followers!  I was hoping for 3 by February 2012; guess I'm just that cool! Ehh! :)

The other day I was looking for "healthy  dinners" and came across this recipe on no other than good 'ol Martha Stewart!  You know, she has an episode on how to fold fitted sheets with just one person?!  Man, I still can't figure it out! I can barely do it by myself with my dad helping me! But guess who can?! My mom! She's awesome!  When I sat down at the dinner table to eat my home-cooked meal, it reminded me of my favorite dish my mom used to cook for us.  Even though her dish was teriyaki chicken strips with white rice and broccoli, it still reminded me of my growing up days! The best part was having a huge glass of milk with it! YUM!!

When I pulled this recipe up, I thought, hmmm this shouldn't be too difficult; so I gave it go!

Dinner for 2 as follows:

Ingredients:

3/4 Cup Brown Rice (i used the individual, throw it in boiling water bag for 8 minutes)
3 Tablespoons Honey (for the sauce)
2 Tablespoons of Sesame Seeds (for the sauce) and it was a *itch to find. :)
2 Tablespoons Soy Sauce (for the sauce)
1 Garlic Glove; Finely Chopped (for the sauce)
2 Large Eggs (Batter) (I did egg-whites)
1/4 Cup Cornstarch (Batter) 
2 Chicken Breasts; Boneless, Skinless
1 Tablespoon Virgin (haha) Oil
2 Scallions for the foodies; people like me, we call them green onions! Side note* I had to google "scallions" and "cornstarch" hahahahaha  Shhhh, don't tell anyone! :)
Broccoli (however much you wanna make) 1 1/2 pounds is good for two people.

Directions:

In a Large Bowl, Whisk together Cornstarch and 2 Eggs (whites)

In a Small Bowl, Add Soy Sauce, Sesame Seeds, Garlic, and Honey.  Stir with a spoon or fork and set aside for later.

Grab your two pieces of Chicken and rinse them thoroughly... No One wants  Salmonella! Got it?! Sprinkle Salt and Pepper to both sides, then place them into your "Large Bowl" Batter; flipping to coat.  Leave them for a minute or two while you grab your pan/skillet.  Add Virgin Oil to pan and turn to medium heat.  Once hot, place chicken into pan, flipping till golden brown on both sides and middle is cooked (6-8 minutes) I usually go for 10 cause I'm always unsure! :)

While Chicken is Cooking, Start Broccoli and Rice.  Cook to how you like it... Stick a fork in it! Ehh!

Once Chicken is ready, grab your homemade sauce and "scallions", and toss to coat!

There you have it, dinner for 2!

You can see this recipe on Martha's website and see that it looks totally different and pretty.  She cut her chicken into nuggets and made a chicken bowl with rice and broccoli.

As you can see below, I did not! Only because I didn't pay attention to detail! hahahaa



Yes, I cleared my plate!  I will be honest though... Not a fan of brown rice, but am a fan of being healthy. (Minus the globs of butter I put on it!) I ate the rice and broccoli first. Can anyone guess why?!

First food post... Come and Get it now ya Hear!

Yeah buddy! Look who's posting their first "food" blog?! It's me! Well, it's actually dessert but I guess dessert is food, right? Anyway...This particular dessert is called "Strawberries with Cream Cheese, Sugar filling!  I originally got the recipe from "Pinterest" from someone who pinned it, who then pinned it, then I pinned it, then I stole it! Got it?! hahaThey called it "Cheesecake Stuffed Strawberries" and I in turn called it something long.  :)

Here's how I made it...

Strawberries (wash, then cut the tops off till they're hollow) or hello hello hello! hahaha
8oz. softened cream cheese
3-4 Tablespoons of Confectioners Sugar (for the foodies) I like to call it powdered sugar. Also, for my "recipe", I used 4 Tablespoons because my girl isn't a huge fan of cream cheese. :)
1 Tablespoon of Vanilla Extract.
Graham Cracker Crumbs. 


In a bowl, mix in cream cheese, powdered sugar, and vanilla.  Stir with a wooden spoon (if you're like me and don't own a mixer) until creamy.

In a plastic baggy, spoon in your above goodies, scissor the tip and fill in the "hollow" strawberry.  Top with Graham Crackers.

If you're not a fan of cream cheese, fill it with whip cream and call it a "special strawberry"!

And so this journey begins...

Wow, I can't believe I'm actually going to give this a go! OK, here's story of how I got started... My sister is a master Crocheter and she does phenomenal work!  So when she started she got all pro computer nerd, looking up blog sites for new patterns (that's what they call them, I guess) and became addicted.  All the time, she says to me, "Jacks, check out this site and that site." So I do.  Then she'll say to me, "Oh check this one out, they have recipes!" (She knows I'm into cooking.) Needless to say, she got me addicted...Jaime (my sister) say's to me, "You should totally start a blog."  I say, "Nah, that's boring."  I continue to eye-spy on peoples blogs and get inspired to cook, well at attempt to cook.  I have to say, so far, so good! I'm what some might call a natural... at least that's what Jaime and my mom call me! HA!

Well here it is... I caved and am now starting a boring blog! I'm hoping for 3 followers by February! hahaa
